You will not see that hourglass shape of factory ammo as they use a roll sizer to make the brass in the size they want. Same for new factory brass. We use a different method to size our brass and it shows.
I always crimp in a separate step, not with the seating die. Much easier to control. I am fond of Redding adjustable crimp dies for 44 and 357. And I find trimming the brass is sometimes needed.
