If you truly catch the 1911 bug, any entry level pistol will soon lose much of its appeal and you'll be back to looking at more upscale examples.

My free advice: get yourself a Colt Series 70 with polished bluing. It'll definitely scratch that itch.
 
May yet get a Colt someday. Ended up getting a Dan Wesson this time-- posted 2 posts above. Taking it out to shoot for the first time today!
 
I'd also suggest you look at the Sig 1911 Nightmare.

I have the carry version with the 4.2" barrel. Terrific gun. A little pricier than some on your list, but I think it's the best value for the money nonetheless.

EDITED: I posted this before I read the last posts in the thread. Congrats on the Dan Wesson! Of the ones in your list, I think that that's the best one. Hope you enjoy it for a long time.

Very good choice.

It would have been my recommendation, followed by the STI Trojan, of the ones you listed.

There is a sweet spot in 1911 pattern pistols, IMO, right around $1500
